Green Beans with Balsamic Vinaigrette
serves 4
Ingredients
- 1 lb green beans, cooked, optionally cooled
- 2 T Balsamic vinegar
- 2 T lemon juice
- 2 T olive oil
- 1 cl garlic, minced
- 1 C cherry tomatoes, halved
- 1/4 C red onion, paper-thin slice
- 1/2 C Feta cheese
Instructions
- Whisk together the vinegar, lemon juice, olive oil, and garlic. Season to taste.
- Toss the beans, onions and tomatoes in the dressing.
- Plate, garnish with the feta, and serve.
